To me, a beautiful riesling is one that maximises the fruit’s traditional characteristics and intensity. It should have ripe, citrus characters and powerful fruit flavours with a delicate, rounded palate. It must have freshness and length of flavour. Balance is crucial: it should be refreshing and arouse the senses, while balancing on the knife’s edge of sweet and dry.
